Next class is Saturday April 17th, 4 pm, at the Blue House in Trucksville on the grounds of Back Mountain Assembly Church.

Please bring an ingredient for the salad bar that feeds approximately 8 people, and either a side dish, main dish, or dessert. At the end of this newsletter you can find more information.

Please let us know if you will be coming, and what you plan to bring, so that we don’t have 5 people bringing sliced tomatoes for the salad bar. Also, we need enough folks coming to actually have a potluck! Thanks!

“Let’s Rebuild. Go Green!”

I have had the pleasure, or should I say unfortunate pleasure of spending much of my life in the so-called quote “Pepsi Generation”. The commercials on TV have said “UMM! A Mc’Donald’s Hamburger”. “Go for all the gusto you can get. You only live once.” “You deserve a break today.” If it feels good, do it.” And recently, “America runs on Duncan”.

I bought the commercial ads hook, line and sinker, and almost died in my early forties.

Many of us Americans have lived our lives in the fast lane on fast foods, meat and potatoes, large breakfasts, large lunches, large suppers, and well, somewhat large snacks before we go to bed. We eat white sugar, white flour, white vinegar, partially hydrogenated oils, artificial colors, artificial ingredients, lobster tails, 16 ounce prime rib, lots of ice cream and cake and you name it, if it tastes good, eat it. That was me for 44 years. My 3-year struggle with drugs in my twenties did not even compare to my terrible diet/lifestyle.

Well, today, I would like to talk about rebuilding our bodies and minds by going Green. I’m not talking about planting a tree or putting up a windmill. I’m talking about green foods and foods that act like green foods.

If you have been anything like me, your body is crying to be spared an early grave. Now cleansing is a biggy and step one. However, I have been talking about cleansing a lot. It is time to talk about the next step, rebuilding. Let’s make our tent homes (Bodies) disease and sickness proof.

Here are some steps we can all take for more and better energy, physical strength, weight loss, being more toned mentally and physically, longer life, clearer and more tranquil minds, and less or even no fear of the big three; Heart disease, Diabetes, and Cancer.

By the way, the big three way of dying is not natural. When folks come up to me at the market and say, “Why get healthy? You have to die of something anyway.” This makes me shutter and want to strangle these people so they might wake up. But, I was the exact same way.

There is a natural way of dying that many folks have done for 6000 years. You lay on your bed when you are ancient in age, bless your kids, grandkids, great grandkids, great great grandkids, and then go to sleep__________________________. Hi Jesus!!!

Step 1 – Pure Water—For starting the healing and rebuilding process we need to hydrate our body and mind. Our bodies are about 70% water and our brains are about 85% water. Our cells sit in a pool of seawater. Yes, we are more than just dust.

According to the “Water Cure”, we need to drink half our body weight in ounces of water a day. For me (I weigh about 135-140) it is about 65-70 ounces or 8 or 9 eight-ounce glasses a day. Green tea and raw carrot juice count as water.

I start everyday with a 12-16 ounce glass of distilled water, a large pinch of sea salt and a teaspoon of BarleyMax. 45 minutes later, I take my power drink, composed of Barley Max, BeetMax and CarrotMax in 8 ounces of distilled water and I’m on my way.

You will be amazed at how you begin to feel when you get hydrated in the morning. Water itself can heal headaches, and is good for the joints and mind.

A rule of thumb, which I never listened to, “about 65-70 ounces (H2O) of prevention is worth 130-180 lbs of cure.”

Step 2 – Greens—Broccoli, Romaine lettuce, Bok Choy, Barley Grass, Alfalfa Grass, Spinach. These are supreme body builders.

These greens will help normalize the blood by adding chlorophyll, which is really the foundation of the blood. The greens contain iron and calcium, among many other powerful nutrients. A cow gets his protein and calcium from the green grass he eats. WARNING! The cows you buy in pieces in the supermarket DO NOT, or should I say Are Not Allowed to eat grass. They are fed grains to fatten them up quickly for profit.

Greens are best eaten raw or uncooked. They are still great eaten steamed, baked, or stir-fried. I take Barley Max 5-6 times a day, as does George Malkmus, who had 6 months to live with colon cancer at age 42. He is now 75 and super healthy. I once saw a 19-year-old dog, very healthy, running around a big room that enjoyed being fed barley grass everyday for 19 years.

All greens are alkaline. Disease hates alkaline. Barley Max is one of the most alkaline foods in the world. If you have any acid problems, take Barley Max. My friend John at the Market sometimes has acid problems. When this occurs, he asks me for some of my Barley Max. Last time I counted the seconds until he began to feel it working. It was 20 seconds on my watch. WOW!

Step 3 – Honey Bee Creations!! Good Carbs, proteins etc.

Raw Honey- Raw Honey contains 165 nutrients. This golden nectar rebuilds bones. It contains two types of raw calcium for the bone knitting process. The Bible says honeycomb, health to the bones.

Raw honey will heal the digestion process, including ulcers.

All raw food including honey contains Oxygen. These foods help to oxygenate our bodies and minds. I have a customer who owns a horse farm. She recently told me that two years ago she had major allergies and asthma. That is when she started eating our honey. I remember that day two black Fridays ago. Today she is totally allergy and asthma free. My pollen allergies since childhood completely disappeared at 50 years old when I started eating Vermont Wildflower honey. Professional Athletes eat raw honey for the long energy (No sugar rush) it gives them.

There are many more beneifits to honey, but for the sake of “you don’t want this note 2 hours long”, I will cut it short.

Fresh Raw Bee Pollen—Some of the longest living people in the world eat pollen on a daily basis. Bee pollen is the ONLY perfect food in the world. It contains every nutrition the human body needs. Now that’s GREEN!

Some of the benefits are younger skin, more physical strength, energy, and healing support of disease including anemia.

Propolis—Poison Ivy (healing in 90 seconds). I am not exaderating. Acne disappears in a couple days. Cold sores heal quickly. Great for sore throats and what tumors might be growing inside.

All the bee creations are anti-oxidant, anti-cancer and it would seem like anti-everything bad.

Step 4 – Good Fats—I know fats can be a 4 letter word in this country, but we do need fats to live, and for a healthy looking body.

Some good fats are nuts (best raw),like almonds (Vitamin E), brazil nuts (selenium), walnuts (omega 3), and seeds, like pumpkin (great for prostate, loaded with zinc) and sunflower (night vision). Other good fats are avocado, flax oil, extra virgin olive oil (sparingly), organic raw dairy (eaten sparingly).

Step 5 – Generally Speaking, other good carbs are whole grains such as brown rice, millet, sweet potatoes and yams. Eat a lot of veggies (raw, steamed, baked, stir-fried), which are loaded with, as Doctor Joel Fuhrman would say, phyto-chemicals. Berries are also very high in anti-oxidants, such as blueberries and elderberries. I would say eat abundant raw fruit in season.

Step 6-7 & beyond—Don’t forget to pray to Christ, forgive, exercise, get some sunshine, breatheeeeeee, cut back on stressssssss.

Ladies and Gentlemen, contained on this page is only the tip of the healthy iceberg. However, there is enough info here to make a great start to a healthy, peaceful, energetic, disease-free, long, young life.

Seriously, an ounce of prevention is really worth a pound of cure.

Monthly Nutrition Classes

I am very excited about the up-coming covered dish/nutrition classes to be held the 3rd Saturday of every month.

At this point in the game, since we have folks spread out all over northern and southern Pennsylvania, we want to have the meetings at three different locations, one each month. I will keep you informed of the location of the month, the teaching topic, speakers, and the culinary theme through this newsletter, and signs at the markets. We wish to meet at the Blue House in Trucksville (Wilkes Barre area), our home in Dorrance (near Mountain Top), and soon to open “Be Nourished” Health food store/Luncheonette across from the Berkshire Mall in the Reading area.

These meetings will give folks who are interested in a healthy lifestyle a chance to stay connected and supported, learn recipes, and find a path to real health with all the extra benefits, including youthful energy, longevity, and no more fear of disease.

Starting in April, the meeting time will start at 4 pm. Each person brings an ingredient for the salad bar as well as a main or side dish or dessert. Everything must be vegan (nothing from an animal or made from animal ingredients; just follow the directions on the other side of this page on a healthy vegan diet). Out of respect to those who come to the meeting that don’t eat meat, we decided to exclude meat. A meat eater can eat vegan but a vegan can’t eat meat. We eat the salad and main course, and then have the teaching, DVD, or cooking demo, etc. After the teaching, we have dessert time and fellowship. The atmosphere should be a mix of party and family reunion. In other words, the monthly events should be a lot of fun.

What do Vegans Eat?

Vegetarians do not eat meat, fish, or poultry. Vegans, in addition to being vegetarian, do not eat other animal products and by-products such as eggs, dairy products, whey, and gelatin.

Foods to Avoid:

Beef, pork, fish, chicken, eggs, turkey, hamburgers, hot dogs, bacon, sausage, bologna, etc. Carbonated beverages and soft drinks, Alcohol, sport drinks, and all drinks and juices containing preservatives, refined salt, sugar, and artificial sweeteners, sulfured dried fruits, All milk, cheese, ice cream, whipped toppings, and non-dairy creamers Refined, bleached flour products, most cold breakfast cereals, and white rice, All lard, margarine, shortenings, and anything containing hydrogenated oils or trans fats, Candy, gum, cookies, donuts, cakes, pies, or other products containing refined sugars or artificial sweeteners, All refined white or brown sugar (brown sugar is simply refined white sugar with some molasses added for color),

Acceptable sweeteners include raw unfiltered honey, stevia, agave nectar, and pure maple syrup, evaporated cane juice sugar and raw sugar in moderation

Egg and Dairy Replacements (to convert a favorite recipe)

As a binder, substitute for each egg:

1/4 cup (2 ounces) soft tofu, or
1 small banana, mashed, or
1/4 cup applesauce, or
2 tablespoons cornstarch or arrowroot starch, or Ener-G Egg Replacer or another commercial mix found in health food stores.
1 Tbsp. ground flaxseed mixed into 2 Tbsp. any liquid

The following substitutions can be made for dairy products:

Soy milk, rice milk or nut milk may be used.
Buttermilk can be replaced with soured soy or rice milk. For each cup of buttermilk, use 1 cup soymilk plus 1 tablespoon of vinegar.
Soy cheese available in health food stores. (Be aware that many soy cheeses contain casein, which is a dairy product.)
Crumbled tofu can be substituted for cottage cheese or ricotta cheese in lasagna and similar dishes.
Several brands of nondairy cream cheese are available in some supermarkets and health food stores

Covered Dish/ Nutrition Meetings!

Last week while talking excitedly about our up-coming parties…….I mean covered dish nutrition meetings, I mentioned the word “vegan” quite a lot. I fear that some folks may have gotten the wrong impression. Let me just say that the reason we are so strict with the ingredients at our covered dish/nutrition meetings is that meat eaters can eat vegan food but vegans can’t eat meat.

Although my family and I are mainly vegan food eaters, we do not teach that it is bad to eat animal products such as meat, fish and dairy. Biting a cow for the purpose of eating it is not a sin. In fact, some of the longest and healthiest living people in the world do in-deed eat meat, fish, eggs and dairy.

The problem with our American love affair with animal products is that we can eat too much at a time and we buy the food from the wrong sources.

If I were going to eat animal products, I would do like they do in the healthiest places in the world. I would either hunt the game myself, or buy from a hunter, or go to an organic farm, like, for instance, “Forks Farm”, which is on the links page of our website. I would likewise buy my dairy raw from an organic farm. There is a shop across from us, “Hilltop Meadow Farm”, at Hometown Farmers Market that sells raw organic dairy. I can even introduce you to our Mennonite friends, Lloyd and Ester, if you choose to visit them.

Raw and organic products from a cow is always much better when the cow is grass fed. You know that grass is where the raw protein and calcium is.

Another tip for long great health is building the daily meal around vegetables and starches or whole grains. If you insist on animal products, they should include only a couple ounces of the meal.

As they say, “Everything in moderation”. The problem is, how many of us can do just that, eat 2 ounces of venison with dinner????? I can just see me 15 years ago at my favorite meat restaurant asking the waiter, “May I have the 16 ounce prime rib in a 2 ounce size please? And, for dessert, I’ll have ice cream, but please hold most of it.

The doctor once told me when I was very ill that I can get away with eating 1 piece of cake a week for the rest of my life. Well, that didn’t last long. One became two, which became four. You know how it works. That is why I went cold turkey (please excuse the pun) when I weaned myself off all animal products. I haven’t eaten any animal in most of the last 12.5 years. I have no desire, even though I totally lusted after hamburgers, ice cream, and such until I was 44.

A friend of mine told me this morning that she just loves lobster tail and would like to have that once in a while. I told her “Go ahead, eat lobster tail occasionally.” It is having these rich foods 3 times a day that gets us Americans in trouble.

At the monthly classes we will be exploring paths to great health, prevention and healing of disease, youthful energy and longevity.

Not everyone has to be a vegan. Not everyone has to be a meat eater. It revolves around the quality of what we put into our bodies. It is how much we put into our bodies. As Fred Bisci would say, “it is more important what you don’t put in your body”.

Are we dealing with a serious disease that needs healing? There is a path. Do we want to prevent disease? There is a path.

The study of nutrition from nature and what it can do is absolutely fascinating. My mother used to say to me; “Mark, if everyone jumped off of the Brooklyn Bridge, would you follow them?”

Ladies and Gentlemen, we do not have to follow the masses to the fast food joints. We do not have to follow the masses to the hospitals. We do not have to follow the masses to the nursing homes. We do not have to follow the masses to an early grave.

Are you personally dealing with a disease, with weight problems, with brain fog? Come to these monthly classes and just see what happens. Someone who had been on his deathbed with the same so-called incurable disease that I had and recovered, told me there was a path and gave me some advice 13 years ago. Today I am 100% healed. I am not in remission. I am healed. I am not an Ulcerative Colitis survivor. I am healed. Praise God!!

The classes will be in Reading, Wilkes –Barre and Dorrance. Make the drive. It could change your life and the life you might touch at these meetings.

Now there are a lot of topics I can teach on, a lot of wonderful healthy DVDs we can show, but………..we would like your input.

What would you like as a topic on a given meeting? Please send in your ideas. I might talk about enzymes but you would have liked me to talk about healing cancer naturally instead. You have to let me know what you would like as possible topics.

The topic is going to be the Honeybees. I plan to show a very interesting DVD on the Beekeepers up in the very north, including Todd Hardie of Honey Gardens. I also plan to talk about what is going on with the bees in America (Are they really going extinct?), the intricacies of a typical bee hive, and the culinary fare that honeybees (the only gourmet chefs in the animal world) serve up for each other and us human folk.

Please add these meetings to your monthly schedule. By being there, you could bless someone else, and help change their life by your support and friendship.

FOOD FOR THOUGHT!

Here are some of the popular questions that are asked us, and our answers from several years ago that still hold true today.

1—How do I get rid of Cholesterol?

Our bodies make cholesterol naturally. Animal products are high in cholesterol and they add to ours if we eat animal products. The American diet is very high in non-fiber foods. Non-fiber foods tend to hold cholesterol in our bodies.

The key is eating less animal products and eating more fiber. The fiber is used as a so-called broom to broom the cholesterol out of the body. We have a product called Fiber Cleanse from Hallelujah Acres, which greatly promotes the process, as well as getting rid of excess weight and parasites.

Remember, eat more fiber or roughage. That means more salads, brown rice, beans, etc.

2— Why don’t we eat fish on the Hallelujah Diet? They ate it in the Bible.

In Bible days the fish was, for the most part, clean. It did not contain mercury poison. Today, 50% of the fish around the world has cancer. Fish is high in cholesterol and contains no fiber. The omegas found in fish do not absorb as well as the omegas from ground flaxseed.

3—I thought honey was honey and it had to be local to heal allergies.

Is all honey the same? Most of your honey in the super market is processed and heated. Even the honey produced by most of the beekeepers is heated somewhat. This destroys most of the nutrition, including the enzymes, turning the honey to sugar.

Honey Gardens wildflower raw honey and our Pennsylvania Swarmbustin raw honey is great for healing spring, summer, and fall allergies. Honey Gardens raw honey, which is produced over 300 miles away works because it is the same flowers that exist here in Pennsylvania and down the east coast.

It is a scientific fact and we see it through testimonies that raw unprocessed-unheated honey heals allergies, digestion problems, stomach ulcers, helps the memory, breathing (including asthma), and folks, this is a big one. According to science and the Bible, raw honey strengthens and builds the bones and teeth. You really didn’t want osteoporosis anyway. Take one or two tablespoons a day to receive these benefits.

My childhood allergies that I had for forty-some-years are now completely gone. They left right after I started eating this honey. I don’t know if part of this was the honey or not (I eat three or four tablespoons a day), but a while back, when I fell off the painters scaffold onto the concrete, butt first, I didn’t break anything. I also believe that the Hallelujah Diet and the barley grass I’ve been consuming for all these years was a big part of my miraculous healing. Thank you God!!

4—People who eat no animal products (meat, fish, fowl, eggs, dairy ) cannot possibly get enough nutrition to survive!!

What do Vegans Eat?

Vegetarians do not eat meat, fish, or poultry. Vegans, in addition to being vegetarian, do not eat other animal products and by-products such as eggs, dairy products, whey, and gelatin.

Why Veganism?

People choose to be vegan for health, environmental, and/or ethical reasons.

The consumption of animal fats and proteins has been linked to heart disease, colon and lung cancer, osteoporosis, diabetes, kidney disease, hypertension, obesity, and a number of other debilitating conditions. Cows’ milk contains ideal amounts of fat and protein for young calves, but far too much for humans.

Animal agriculture takes a devastating toll on the earth. It is an inefficient way of producing food, since feed for farm animals requires land, water, fertilizer, and other resources that could otherwise have been used directly for producing human food.

Today’s farms are not like the ones most of us learned about in school; they are mechanized factories where an animal’s welfare is of little concern compared to profit.

Vegan Nutrition

The key to a nutritionally sound vegan diet is variety. A healthy and varied vegan diet includes fruits, vegetables, plenty of leafy greens, whole grain products, nuts, seeds, and legumes.

It is impossible to list all the foods that vegans eat, but here are some guidelines to choosing vegan foods. Many of the vegan foods listed are also good sources of fiber, phytochemicals and other micronutrients:

Sources of Protein in a Vegan Diet: Whole grains (eg. whole wheat flour, bread and pasta, brown rice, oats, rye), nuts (eg. hazelnut, cashews, brazilnut, almonds), seeds (sunflower, sesame, pumpkin), legumes/pulses (peas, beans, lentils), soy products (flour, soy milk, tofu, tempeh).

Sources of Carbs in a Vegan Diet: Whole grains (e.g. whole wheat, oats, barley, brown rice, millet), whole-wheat bread, whole grain pasta and other flour products, lentils, beans, sweet potatoes, dried and fresh fruit.

Sources of Fats in a Vegan Diet: Nuts and seeds, nut and seed oils, vegan margarine, avocados.

Hope you are all doing well on this last week of snowy February. Thanks for opening the note today.

I was going to email you all yesterday how I was unsure whether I would be open for business at Green Dragon due to the snow forecast. Then I changed my mind and decided I would go no matter how much snow we got. By 11 pm last night, I had my 4-wheel drive truck all loaded, I had completed shoveling the driveway of about 7-8 inches of snow. I would get up at 5 am, get ready, and go.

The alarm woke me at 5 am. I looked outside at what used to be our driveway (Our driveway is about 250 feet long with a steep hill) and was surprised to see what looked like the Sahara Dessert with all the snow instead of sand. I tried to push open the door, failing miserably. 15+ inches fell between 11 pm and 5 am, with heavy snow still falling. This was a bit much for me and my truck, so I went back to bed. As I am writing this note, it is 2 pm and still snowing. This is all bringing back memories of my days as a paperboy back in the sixties pulling my sled instead of riding my bike, and walking the drifts to the houses.

I called the office at the Green Dragon this morning and found out they had less than 1 inch of snow on the ground. Oh well! For those of you who came to the Hallelujah Hive shop, I am sorry I wasn’t there. I tried my best, but no matter how much I make up my mind to do something; there are forces sometimes stronger than me!

“10,000 Years From Now”

Have you ever wondered where you will be, or what you will be thinking about exactly 10,000 years from now? I have. In fact, I have actually worried about it. That is the kind of mind I have always had. I not only worried about today or tomorrow, I worried about the far out there future.

When I was in my twenties searching for the meaning of life, I spent a lot of time writing down my thoughts, my questions, my dreams. I spent my twenties doing some drinking, drugs (medical & street), some college, some construction. I played some gigs on my horn and string bass. I went camping around America, drove over 8000 miles in less than a month. I tried to grow my hair long, I was in the hippie generation of course. I couldn’t grow my hair long like everybody else, it started to fall out.

I was once told that the scientists figured our sun would eventually burn out in a couple hundred thousand years. I actually got depressed. I thought that this can’t be. They “must” first invent a way that I can live on earth always, then discover a way to save the sun.

When I was 5 years old, my 11-year-old neighbor Margie Finan told me that when I die I can go to heaven if I trust and believe in God. I remember getting very upset. I did not want to die. I asked Margie if God would fix me up at that time and put me back on earth. She told me no.

I could not handle that statement and rejected the whole idea. I am 57 now and I remember that conversation like it was yesterday.

I am a scheduler. One of the few things I enjoyed about being a drywall contractor was that I got to schedule all kinds of things. I grew up wanting to schedule my life and beyond.

Because I am a scheduler, I don’t want to look forward to heart attacks, diabetes, nursing homes and hell. These are not good things. I don’t want these things. Back in my twenties I didn’t seem to care much, but I find myself caring a little more, it seems, every day.

On the subject of hell, there was a builder named Herb, whom I did much drywall work for, many years ago, in the New Hope, PA area. We had many spiritual conversations over the years. He believed that when you die you become plain ions and float out into space and stay there forever floating.

Our last conversation was very interesting. I told him that Jesus would save his soul if he repented of his sins, then he will go to heaven when he dies. Herb told me that he did not believe in God, Jesus, or any of that.

Herb said that we are ions floating in space after we die. My last words were: “Herb, if you are right, then after we die, both of us are going to float into space as ions. (Boring in my mind) However, if I am right, then I will go to heaven (Because of Christ) and you will go to hell.” Scary!…

Herb became quite angry. Herb never hired me again after that. Was it possible that Herb didn’t believe in Christ, or that he didn’t want to believe? Could that be why he became so angry?

Now it would seem to me that if I believed in the Easter Bunny and you believed that the Oak Tree was God, I would think “good for you. You believe in the Oak Tree. You are probably crazy. So…that’s cool! …who cares?” Isn’t that the way the reaction should be if you plain don’t believe in something? Or is there more to it than just not believing?

On the subject of nursing homes, diabetes etc. I also have had many interesting conversations. Many say things like: “Well, you have to die of something anyway, what does it matter what you eat?”

Jack La Lanne is 95 years old. He says “Exercise is king and diet is queen. Together they make a kingdom.” He works out 2 hours a day, takes 40 supplements a day and eats right. He drives a red late model sports car. He says he is happily married and still teaches all over the world with his wife.

I don’t know if you have noticed, but there are a lot of celebrity people dying or dropping dead in their fifties and sixties right now.

That doesn’t mean that it can’t happen to me or you, but I would like to try to enjoy life without that worry or pain. Life is tough enough without worrying if I’m going to get cancer or have a heart attack everyday.

I will not pretend. Everyday lifestyle is an ongoing battle with me. I do not always win. Sometimes I lose. I sometimes eat too many sweets or too much pasta and gain weight. I sometimes slap Jesus in the face by sinning and hurting Him and my fellow man. I hate when I do that.

However, as long as I have breathe, I am going to fight the temptation to sin, eat wrong, and just sit on the couch and watch the idiot box.

My goal is to eat the right foods more and more. Eat the wrong foods less and less. Take the right supplements, exercise, and love instead of getting an attitude.

I do have a lot of great days where I (in my mind) eat right, exercise, and feel good. I find as time goes on, with practice, this is becoming more the norm.

I want to work in the markets and teach others about good diet, preventing disease, and living for Christ, to over 100 years old. Like Paul Bragg at 95 going surfing, I hope at 95, I can be a living testimony at the markets and all other areas of my life.

This is what I believe. This is what I was searching for in my twenties, but I was too full of myself and cream donuts to find what I was looking for.

Dear friends, good food, according to Dr. Lorraine Day, Dr Fuhrman, Dr. Norman Walker, Jack La Lanne and Doctor George Malkmus, are large amounts of greens, lots of fresh drinking water, whole grains, raw nuts and seeds, fresh fruit and fresh vegetable juices.

Go for relaxing walks, exercise with dumb bells, take in the sunshine, dance, laugh, sing songs to people, our loved ones, our cats and dogs and to Jesus. Let’s love our enemies. We don’t have to like them. LOL! Have a vegan tomato pie with vegan cheese, tomato sauce, mushrooms, spinach, garlic, caramelized onions and veggie meatballs.

Health & Nutrition Classes!

This Sunday morning 9:45, at the Blue House, we will be talking about living real life through raw food. It is easier than you might think.

Our next Saturday class will be March 20th, 2 pm at the Blue House in Trucksville. We plan to major on the Honey Bees that day.

What we are hoping to do, starting in April, is to have a monthly Potluck dinner/class. The scenario would be this way: Everyone attending would bring an ingredient for the salad bar and a side dish or a dessert that is totally vegan. We would have the salad and main course, than I or another speaker would teach. There might be a DVD or even a cooking demonstration. After this is finished, we can all have dessert and socialize.

We plan to have the classes at several different locations according to what month it is. For instance, the April class will be at the Blue House. This is good for those who live mainly in the Wilkes-Barre area. The May class will probably be at our home in Dorrance, which is located between Wilkes-Barre and Hazleton.

Now here is where I need your help. A couple times a year I would like to have the dinner/class at a location in the vicinity of, or somewhere around Reading. We have a lot of folks we know that come to Green Dragon Farmers Market who would like to attend a class, but it is over 2 hours away for them.

Is there someone reading this note who would like to volunteer their home or church, etc. and host one, two or three of these meetings a year? Please let me know. I believe it would be greatly appreciated by many. We would have to have enough room to set up a small buffet/salad bar, and hold a few folks, maybe 10, 20… You could call or email me and I can give you the details on the set-up.

I know from experience, that the meetings are simple, down home and laid back. They are a lot of fun. People meet people, make friends, learn about healthy eating and are encouraged in the healthy lifestyle.

“Raw Anyone”

Please don’t jump ship! What I am about to share is exciting. Doing even a part of what I am about to share could change your life for the better. Doing more could change your life for the best.

We just finished showing the DVD “Simply Raw” at our Sunday Nutrition class. Yours Truly was actually crying at the end. But I can be found crying at Sponge Bob cartoons. LoL! However, whether or not I was crying, it was still a powerful, touching story which chronicles six Americans with diabetes who switch to a diet consisting of vegan, organic, live, raw foods in order to reverse diabetes naturally. The participants are challenged to give up meat, dairy, sugar, alcohol, nicotine, caffeine, soda, junk food, fast food, processed food, packaged food, and even cooked food, as well as go without their loved ones and many of their creature comforts for 30 days.

There are two type 1 diabetics and four type two. One leaves because he don’t like the food. The other five get healed of diabetes, even the type 1. Medical Doctor Gabriel Cousens is one of the medical personnel overseeing the patients.

Afterwards one of the type 1 diabetics went on to school to become a Naturopathic Doctor.

We will keep it simple and start with an organic apple right off the tree. Let’s say we eat this apple at 10 am. Within minutes we have this surge of energy. We feel more alive. We feel good. What is happening?

We are eating live food. We have just put life into our living body. The live apple contains enzymes. Enzymes begin to die at 107 degrees. God gave us only so many enzymes in our bodies for digesting food. We use them up as we eat more and more cooked food. But the apple has just helped renew our enzymes. This is a weird simile, but it’s like Frankenstein getting the electric fed into him to give him life. The more electric, the more life.

The apple also contains, believe it or not, raw calcium and raw protein, along with many other nutrients in their natural raw state. The calcium, since it is not cooked, can absorb into our bones, along with the other nutrients leaving less chance of osteoporosis.

The apple also contains oxygen, not contained in cooked food. The oxygen feeds into our blood and cells, oxygenating our body, making less of a chance of getting asthma.

The oxygen and enzymes, along with the other raw nutrients, work as a team to bring energy to our body and clearness to our mind. Cooked food takes away energy as the body has to concentrate on digesting the food with its own enzymes.

Are you catching my drift? When Dorothy and I eat raw food all day, our energy seems to be endless.

The raw apple is also alkaline. If we flood our body with mostly alkaline food, our chance of acquiring a disease is nil. Most raw foods are alkaline. Most cooked foods are acidic.

Now please let me explain something at this point. There are good acidic foods. Not all cooked food is bad. Raw food alone does not make ones body disease proof. There are other criteria involved, like watch the high stress. Stress is very acidic. We need to exercise. Just ask Jack LaLanne! We need other pieces of the puzzle also like sunshine, rest, etc.

To review at this point; raw foods gives our body alkaline, oxygen, enzymes, and live nutrition.

Raw food also helps the body heal more readily from what is ailing it.

Raw food helps the body slow the aging process. That is why we see folks like Dr. Norman Walker living to 119, Paul Bragg surfing at 95, Mark Gibson climbing mountains at 57…Oh! How did he get in there? See me in 20 or 30 years when it is a real testimony. For me, it is though, after the ulcerative colitis and arthritis.

On a given day, when I am being good, doing what I should, I drink about 70 ounces of distilled water, which I count with my raw juices and tea.

I drink about 32 ounces of organic decaf green tea sometimes with raw honey and sometimes with no sweetener. I take Barley Max 5 or 6 times. At least two of those times I mix with either Carrot Max or fresh carrot juice. One of those drinks I call my power drink in which I also mix Beet Max with the carrot and barley.

I have no breakfast except these drinks 45 minutes to an hour apart.

Lunch is either my concoction of raw almond butter, raw honey, raw bee pollen, elderberry syrup, a handful of raw sunflower seeds, banana and a side of raw pumpkin seeds. Or I may join Dorothy with a green smoothie, which is about 60% greens and 40% frozen raw fruit. Or I may have no lunch at all. Another good lunch is a nice large green salad.

During the day I may eat an apple. I hate apples that are not organic. They have no flavor and not much in nutrition either.

I always take a fiber supplement sometime during the day. Most of the time I take the B-Flax-D mixed with the Wild Cherry Syrup from Honey Gardens, some psyllium and plenty of water. Dorothy adds some organic maple syrup to hers. I keep forgetting. But I plan to add this too.

All day long, I am loaded with youthful energy. Buttttt! If I mess up and eat something cooked at say 12 pm, I lose energy and can get lazy.

Dinner we have a large green salad and some cooked, which may be whole grain brown rice, pasta, soup, stir fry, etc.

In the evening it’s herb tea and maybe a piece of fruit.

Now on occasion, it is nice to have a treat, like a piece of Laura’s pie or some organic popcorn.

We are all human. We all can stray off the road a little once in a while. Believe me, I know. However, we must not throw the baby out with the bathwater. If the horse throws you sometimes, just get up and get back on that horse. That is the key. Never give up!!!!!

Raw! You might want to try it. Work some in to the daily diet. Then work more in. Raw will strengthen the bones (raw honey), brings youth back to the skin (raw bee pollen), rebuild and alkaline the body from the cellular structure (Barley Max), renew our exhaust system (B Flax D and Fiber Cleanse), and clear our minds. Raw will relax our countenance yet at the same time give us more energy than ever seemed possible.

Raw will take away any fear of disease, since it alkalizes our bodies. Disease cannot live in an alkaline environment.

Let’s together prepare our minds and bodies for spring. Let’s get on the horse and stay there. Then, in April, if we lived close together and there was a field outside, I would say, “Who has a football?”

Pittsburgh Health Seminar

It went really well. It was a little scary when I walked into this room full of lots of folks at tables eating, and I didn’t know anyone except my sister Linda, her husband Tom, my niece and our daughter, Amy. Nevertheless, in just a few minutes, after folks starting introducing themselves to me, I felt right at home. Sunday night I made many new friends.

The three most important foods that I put into my body. What are they? I bet you are wondering how I, Mark Gibson stay so incredibly fit, almost 6 foot, large biceps, and colorful, youthful hair. OK! NOT! I realize I started a little late in life on the nutritional and exercise thing. I’m just a little short of 6 foot (6 inches short). The biceps aren’t quite that big. The hair is colorful if you like different shades of gray. But hey! I’m trying. I’m always watching for that brown hair to appear when I look into the mirror. LOL!
I do however feel like a kid much of the time. I get to climb mountains with my beautiful wife Dorothy. My arthritis and nerve ending problems are gone from around ten years ago. Praise the Lord, my Maker, for giving me food that is medicine! I do not fear disease anymore.

Alkaline or Acid, Could be Life or Death
I know that there are those out there that want to be healthy but may not understand the science behind it. For instance, you may be thinking, “How do I get rid of all that heartburn, all that gas, depression, the tiredness, so many colds and sore throats, the dry skin, the acne, the weight, the aches and pains, the fear of terrible disease?” It seems like everybody is getting cancer, diabetes, or heart disease and stroke. I’m scared of the future. Nevertheless, I try to eat right. I just have no discipline. Help!
That was me, Mark Gibson, about 15 years ago. Then what I feared the most came upon me at age 42. However, we have a God that loves us so much that He brought people into my life with great Wisdom, who taught me what to do to get 100% well. Not only that, but even how to get my youth back.
Something I learned that was very simple for me was that some things in life are acid, and some things are alkaline. We need mostly alkaline with just a tinge of acid. You see our blood is 7.4 ph. That is alkaline. Everything our bodies take in needs to be brought to a PH of 7.4 for our blood. If our blood’s ph changed at all this way or that, we would die. Therefore, our bodies do what is necessary with what it has. For instance, if we eat or drink something cooked that contains high protein, like cows’ milk or meat, our bodies need alkaline to neutralize the animal protein, which is very acidic. If there is not enough available, like from raw leafy greens (best food source of alkaline), it drains calcium (alkaline) from the bones. If this happens enough, we get osteoporosis.
Let me give you a list of some conditions that contain acid or cause acid in our body.
Above everything else are cigarettes and high negative stress. Yes, stress causes the body to release uric acid, which is also contained in meat products. Uric acid causes joint problems such as arthritis. In addition, pollution helps give us an acid system. Foods that contain acid are dairy, meat and fish products, most cooked foods especially fried, tomato sauce, spicy foods, white vinegar, white sugar, white flour, artificial ingredients, and caffeine. High acid is also connected to unforgiveness, bitterness, jealousy, fear, worry, anxiety, taking on the responsibility of the world, ourselves, etc. YUK. Did I say that acid is found in the nightly news?
Now let’s talk about some alkaline causing conditions. First of all a merry heart. Also, peace, joy, love, hope, forgiveness, prayer, and meditation are high in alkaline.  Pure water! We need to drink half our body weight in ounces each day, along with about a half teaspoon sea salt, to help the body perform healing functions and other functions.
Moving water, such as a waterfall gives off negative ions, which help our sinuses and mood when we breathe it in (lit beeswax candles do the same thing). Some alkaline foods are  raw vegetables, some raw fruits, baked yams or sweet potatoes, millet, nuts, seeds, and raw vegetable juices.
Now if we can aim our diet/lifestyles more towards the alkaline way of life, one of those things that cause acid (worry of contracting disease) will go away. Excluding any accidents, or heroic martyrdom, we were created to pass on peacefully, blessing our children-grandchildren-great grandchildren-great great grandchildren-etc., and then passing on, maybe even in our sleep.
God told Noah in Genesis 6:3 that man would live only 120 years. That’s not sickly-nursing home, depending on everyone else, years. Sure, we can live with our kids when we’re 105, but we can work the garden while they’re at their work.
Did you know that putting acidic foods into our bodies affects our mood, whether we’re depressed or happy, even effecting us spiritually? They have found that putting artificial junk like food coloring, hydrogenated oils, meat and dairy from animals fed antibiotics and fatteners, causes more aggressive behavior, nervous tension, migraines, etc.
Those with a mainly or mostly vegan diet, for the most part, tend to be more peaceful people. Also, the myth that being a vegan makes one weak is a lie from the pits of Hell. I was just as weak as a meat-eater as I am as a vegan. LOL!
The strongest weight lifter for his age/weight class in the United States drinks organic apple juice before he lifts at a meet (he is an older vegan). Some of the medal winners at the Olympics you’ll find are vegan. Carl Lewis, the fastest man on the earth is a vegan. The strongest animals in the world (gorillas and elephants) got big and strong on green leaves.
In the book of Daniel in the Bible, Daniel and his friends were total vegan, only plant-based foods and water, and they were the champions of the Kings court and throughout the empire of Babylon. They looked stronger then all the Kings men and had the greatest wisdom in the empire.
I, yours truly, after 44 years of lots of meat and dairy (much acid), have personally tried this vegan (alkaline) lifestyle for the last 12+ years. I admit that I am not Mr. America. However, I have never felt better in my life. Every year I feel stronger. Who wants to arm wrestle? Ha-Ha.
Alkaline is the key. After studying the masters of diet in the Bible and in the world yesterday, and today, I am convinced. I looked not only at what they said, but the legacy and testimony that they left. I already mentioned some.
Norman Walker died somewhere between 109 and 119 after getting home from his daily bike ride with his friends and passed away during his daily nap. Paul Bragg died in a surfing accident at age 95 in Hawaii. George Malkmus, after being told he had 6 months to live with colon cancer, at 42, is now in his seventies, healthy and teaching all over the world. Lorraine Day, once head surgeon for 20 years at the San Francisco General Hospital, on her death bed with breast cancer, refused chemo and radiation. On the so-called Hallelujah Diet (vegan), she now teaches all over the country, and you may have seen her on TV. She’s the one that looks about 40, but is actually almost 70. Jack La Lanne is 95 and still working out 2 hrs a day. By the way, Jack recently bought a new red corvette. Jack says that he can’t die. It would be bad for his reputation.
My sister Linda, Dorothy, and I have actually talked to cancer survivors, who were dying, changed their diets, and now are very healthy and cancer free. The Bible says in the first chapter of Genesis that our diet is to be plant based (alkaline).
Before I say anything else, I just want to mention that I don’t believe eating animal products such as meat and dairy is a sin. It’s not. Eating raw, organic dairy in moderation, can actually be good for you. Organic meat eaten in moderation may also be of some benefit. However, please stay with me.
God fed Israel manna from the sky in the dessert for 40 years. There was no problem until they wanted meat. God gave it to them, they gorged on it, and many of them died with it still in their mouths. (Numbers 11:32)
Now, I’m not trying to put down meat eaters. Like I said, it is not a sin to eat meat. It is not.
I’m trying, like was pointed out to me when I was sick, to point folks toward a path to optimal healing and health, like these great patriarchs, I have been discussing, traveled. The Lord knows we don’t need more fighting amongst ourselves like democrats and republicans do. Everything in moderation. The longest living folks in the world base their diet around starches & vegetables. They may eat a couple ounces a meat as a garnish now and then.
If we want to have maximum health, we need to eat more alkaline foods and less acidic. Animal products from the grocery store tend to be the most acidic.
Curve the high stress, exercise liberally, get plenty of sunshine, drink lots of pure water (8 to 10 glasses a day), meditate on peaceful things, pray, and EAT ALKALINE. My diet consists of lots and lots of distilled water, Barley Max, raw honey, raw bee pollen, fiber, and lots of raw fruits and veggies. The little bit of acidic I eat is fine because of all the alkaline.

The three most important foods that I put into my body. What are they? I bet you are wondering how I, Mark Gibson stay so incredibly fit, almost 6 foot, large biceps, and colorful, youthful hair. OK! NOT! I realize I started a little late in life on the nutritional and exercise thing. I’m just a little short of 6 foot (6 inches short). The biceps aren’t quite that big. The hair is colorful if you like different shades of gray. But hey! I’m trying. I’m always watching for that brown hair to appear when I look into the mirror. LOL!
I do however feel like a kid much of the time. I get to climb mountains with my beautiful wife Dorothy. My arthritis and nerve ending problems are gone from around ten years ago. Praise the Lord, my Maker, for giving me food that is medicine! I do not fear disease anymore.

The proof of the pudding is that my wife, children, and I have not visited the doctors since 1995 when I was diagnosed with an incurable disease. The four of us have not taken any meds including as much as an aspirin. If I am boasting, it is only in what God can do through good natural nutrition.

Alkaline or Acid, Could be Life or Death

I know that there are those out there that want to be healthy but may not understand the science behind it. For instance, you may be thinking, “How do I get rid of all that heartburn, all that gas, depression, the tiredness, so many colds and sore throats, the dry skin, the acne, the weight, the aches and pains, the fear of terrible disease?” It seems like everybody is getting cancer, diabetes, or heart disease and stroke. I’m scared of the future. Nevertheless, I try to eat right. I just have no discipline. Help!
That was me, Mark Gibson, about 15 years ago. Then what I feared the most came upon me at age 42. However, we have a God that loves us so much that He brought people into my life with great Wisdom, who taught me what to do to get 100% well. Not only that, but even how to get my youth back.
Something I learned that was very simple for me was that some things in life are acid, and some things are alkaline. We need mostly alkaline with just a tinge of acid. You see our blood is 7.4 ph. That is alkaline. Everything our bodies take in needs to be brought to a PH of 7.4 for our blood. If our blood’s ph changed at all this way or that, we would die. Therefore, our bodies do what is necessary with what it has. For instance, if we eat or drink something cooked that contains high protein, like cows’ milk or meat, our bodies need alkaline to neutralize the animal protein, which is very acidic. If there is not enough available, like from raw leafy greens (best food source of alkaline), it drains calcium (alkaline) from the bones. If this happens enough, we get osteoporosis.

Above everything else are cigarettes and high negative stress. Yes, stress causes the body to release uric acid, which is also contained in meat products. “I’m Constipated, Moody, and I Can’t Lose Weight”
Been there! Done that! What a place to be. It hurts. It seems hopeless. It is amazingly frustrating. OK! So much for the negative. That is enough of the half empty glass.
Ladies and Gentlemen, constipation, moodiness, and not being able to lose weight is NOT an incurable disease. I have been there. Others I have seen have had victory in this area. I have had victory in this area. Please allow me to share some tips on breaking up the so-called log jam.
Let’s first look at some causes of constipation and or weight gain:
#1 Insufficient amounts of fiber in the diet.
#2 Insufficient amounts of fluids in the diet.
#3 Not enough exercise.
#4 Side effects from drugs such as painkillers and antidepressants.
#5 Heavy consumption of junk food.
#6 Some medications such as blood pressure and heart medicines.
#7 Calcium supplements.
So let us deal with these causes one by one.
#1- not enough fiber. White sugar, white flour, processed foods and animal products including meat, fish, eggs and dairy are big in not containing fiber.
Try eating less of these non foods and eat more fibrous foods like vegetables (Raw, steamed, baked), fruits, yams, sweet potatoes, brown rice, greens & beans, raw honey, fresh bee pollen etc.
#2—Not enough fluids. Try working up to half your body weight in ounces of pure water everyday. Drink lots of organic de-caf green or herbal teas, freshly extracted vegetable juices like carrot/celery, beet and barley grass juice. Now were on a roll. Can’t you feel the constipation already showing signs of breaking up?
#3—Not enough exercise. You can break up the fallow ground by doing some walking everyday. Maybe throw in some swimming, or an aerobic workout. I try to do some push-ups, sit-ups and get some weight bearing exercise with dumbbells several times a week.
#4—Side effects from painkillers and antidepressants. Well, if you think about it, if you are already doing number one, two and three, you probably don’t need these meds anymore anyway.
#5—Heavy consumption of junk food. JUST STOP IT!!!
#6—Blood pressure and heart meds. The blood pressure should naturally come down by cutting out a lot of the animal fats that thicken the blood making the heart work more.
Try doing a gentle colon cleanse also to relieve the blood pressure. HEY! We have a gentle colon cleanse, which now also comes in lemon and apple flavor.
By doing all these lifestyle changes, you could see your heart getting stronger too.
#7—Calcium supplements. Raw calcium comes naturally in Raw Honey, Fresh Bee Pollen, raw fruits and veggies. It does not happen in pasteurized dairy. That is cooked calcium. Raw organic dairy is good in moderation.
OK! If you have done all of the above, your constipation should be going away. There should be no more mood swings, because you are now feeling good. And you are probably really in a good mood, because you just checked out your weight on the scale and it is going down. Hallelujah!!

“I’m Constipated, Moody, and I Can’t Lose Weight”

Been there! Done that! What a place to be. It hurts. It seems hopeless. It is amazingly frustrating. OK! So much for the negative. That is enough of the half empty glass.
Ladies and Gentlemen, constipation, moodiness, and not being able to lose weight is NOT an incurable disease. I have been there. Others I have seen have had victory in this area. I have had victory in this area. Please allow me to share some tips on breaking up the so-called log jam.
Let’s first look at some causes of constipation and or weight gain:

#1 Insufficient amounts of fiber in the diet.
#2 Insufficient amounts of fluids in the diet.
#3 Not enough exercise.
#4 Side effects from drugs such as painkillers and antidepressants.
#5 Heavy consumption of junk food.
#6 Some medications such as blood pressure and heart medicines.
#7 Calcium supplements.

So let us deal with these causes one by one.
#1- not enough fiber. White sugar, white flour, processed foods and animal products including meat, fish, eggs and dairy are big in not containing fiber.
Try eating less of these non foods and eat more fibrous foods like vegetables (Raw, steamed, baked), fruits, yams, sweet potatoes, brown rice, greens & beans, raw honey, fresh bee pollen etc.
#2—Not enough fluids. Try working up to half your body weight in ounces of pure water everyday. Drink lots of organic de-caf green or herbal teas, freshly extracted vegetable juices like carrot/celery, beet and barley grass juice. Now were on a roll. Can’t you feel the constipation already showing signs of breaking up?
#3—Not enough exercise. You can break up the fallow ground by doing some walking everyday. Maybe throw in some swimming, or an aerobic workout. I try to do some push-ups, sit-ups and get some weight bearing exercise with dumbbells several times a week.
#4—Side effects from painkillers and antidepressants. Well, if you think about it, if you are already doing number one, two and three, you probably don’t need these meds anymore anyway.
#5—Heavy consumption of junk food. JUST STOP IT!!!
#6—Blood pressure and heart meds. The blood pressure should naturally come down by cutting out a lot of the animal fats that thicken the blood making the heart work more.
Try doing a gentle colon cleanse also to relieve the blood pressure. HEY! We have a gentle colon cleanse, which now also comes in lemon and apple flavor.
By doing all these lifestyle changes, you could see your heart getting stronger too.
#7—Calcium supplements. Raw calcium comes naturally in Raw Honey, Fresh Bee Pollen, raw fruits and veggies. It does not happen in pasteurized dairy. That is cooked calcium. Raw organic dairy is good in moderation.
OK! If you have done all of the above, your constipation should be going away. There should be no more mood swings, because you are now feeling good. And you are probably really in a good mood, because you just checked out your weight on the scale and it is going down. Hallelujah!!

Hey Everyone,
I hope you all are having a fantastic week and enjoying the slightly warmer winter weather we’ve been having! :-)       I’ve decided to share some of my time teaching another love of mine. Most of you might not know that I have been playing the flute most of my life.  I’ve played for almost 15 years now. I have the honor of playing 3 services a week in the worship band at Back Mountain Harvest Assembly of God Church. I wish now to pass on this love for music by teaching school age kids how to play the flute. If you know any kids that would have an interest in learning this joy don’t be afraid to contact me. :-) I’ll be having one-on-one lessons through my home (Dorrance, PA) that will be 45 minutes in length & only cost $15 a lesson. “Our Adventure in Asheville North Carolina”

As many of you know, Hallelujah Hive was closed at the markets last week. Last December my father passed away. So us Gibsons along with my sisters and their families got together in Nashville, TN last week to give Mom a Christmas. It was very nice for all involved.

Of course, on the way home we just had to stop in Asheville, NC to check out what folks have been saying about this artsy, health minded place. It is! Very much so, artsy and health-minded.

We discovered a small, exceptionally clean city nestled amongst the Blue Ridge Mountains in the middle of no-where.

It immediately reminded me of a larger scale Burlington Vermont (which is one of our favorite places in our world) without Lake Champlain. Instead of a lake, the town is surrounded with 6000 + feet mountains. It seemed that every other eating joint was vegan friendly and had organic fare. There were plenty of small cafes, coffee shops, and restaurants. The money spent was spent at coffee shops, cafes and a restaurant or two. The problem was I drank too many de-caf organic coffee drinks, ate too much rich vegan chocolate cake and hearty vegan dishes. My wallet is empty and my tummy is full. I am, as we speak, on a serious de-tox. No rich foods or chocolate cake for me for a while.

The art galleries are out of this world and free. Who needed to go to an art museum? If you like to browse shops, they are endless.

If you ever visit the Asheville area and want to stay at a good organic, holistic B&B, we stayed at The Hawk & Ivy, just outside of Asheville in Barnardsville. James and Eve are the most wonderful down-home inn-keepers. These folks are the image of southern hospitality. Breakfast was awesome. Too much food! We were given a full tour and history on their home.

James is an accomplished poet, and Eve an artist and gardener/florist. We also found out they are both members of the Asheville Bee Club with hives of their own.

Through James and Eve we have discovered “Sorghum”, which is in the molasses family. I have never tasted this flavor in all my life. Besides tasting so good, which is usually bad these days, sorghum is actually a health food, containing iron, calcium, and potassium.

The Asheville area is also plentiful in Sourwood Raw Honey, which we have many folks asking for at the markets.

Well, who knows. James and Eve have given us some good leads, and maybe, just maybe, sometime this year we might be able to come up with a couple new healthy products.

The Inn sits on 50 acres with beautiful gardens (even with a blanket of snow, as we saw them) and walking paths.

Congratulations! We all made it through another year. Now let’s prepare to tackle 2010.
Reminder!
We are OPEN TOMORROW at Green Dragon, New Years Day, from 9 am until about 8 or 8:30 pm.
Hallelujah Hive will NOT BE OPEN NEXT WEEK at Green Dragon & Hometown Farmers Markets. We will be closed on January 6 & January 8. The Markets will be open, but our stores will be closed just for that week.
Look for us to re-open all the earlier the following week, January 13 at Hometown and January 15 at Green Dragon.
With the exception of next week, we are open year round at both Markets.
At the Hometown Farmers Market on Wednesday, we were talking to a fellow named Willard. Willard walks past our shop once or twice a month. He is a very friendly man who likes to socialize.
During our conversation Wednesday morning, we asked him how old he is, since he looks up in years, like around his mid  80’s. He told us he is 96.
Willard still drives to the market often. His eyes are still sharp and he can read without reading glasses. He speaks at least two languages and is sharp as a tack. He spent 5 years in the coal mines and over 38 years as a machinist. We asked Willard his secret to such great health all these years.
Willard doesn’t believe in eating sugar. He says it is bad for the body. He eats some nuts every morning with his cereal. He does not eat after dinner. Occasionally he has a half glass of red wine that is not sweet. By the way, his attitude was and is very positive. He pointed to the sky more than once to his Savior who he says takes care of him.
I hope we see him at the market for a long time to come.
Meanwhile, Jack LaLanne is now 95. He says he still works out 2 hours a day. A half hour of that is swimming.
These days you’ll find him and his wife driving a late model red corvette.
Nutrition Classes!
January 16th Saturday at 2 pm. It will be held at the Blue House on the property of Back Mountain Harvest Assembly of God Church on Carverton road, Trucksville, off of route 309. According to how many show up, we plan to hold these classes once a month.
January 17th Sunday at 9:45am. The location is the same as the 16th. These classes will be held weekly.
NOTE:
The classes are free. We will be discussing topics such as natural weight loss, natural prevention and healing of disease, the bees and their fountain of youth products, the great health patriarchs, what we should and shouldn’t be putting into our bodies and much much more.

If you live in the Pittsburgh area, I will be speaking at the Methodist church in Monroeville on Sunday evening January 31st. There will also be a potluck dinner.
