Please bring an ingredient for the salad bar that feeds approximately 8 people, and either a side dish, main dish, or dessert. At the end of this newsletter you can find more information.
Please let us know if you will be coming, and what you plan to bring, so that we don’t have 5 people bringing sliced tomatoes for the salad bar. Also, we need enough folks coming to actually have a potluck! Thanks!

“Let’s Rebuild. Go Green!”
I have had the pleasure, or should I say unfortunate pleasure of spending much of my life in the so-called quote “Pepsi Generation”. The commercials on TV have said “UMM! A Mc’Donald’s Hamburger”. “Go for all the gusto you can get. You only live once.” “You deserve a break today.” If it feels good, do it.” And recently, “America runs on Duncan”.
I bought the commercial ads hook, line and sinker, and almost died in my early forties.
Many of us Americans have lived our lives in the fast lane on fast foods, meat and potatoes, large breakfasts, large lunches, large suppers, and well, somewhat large snacks before we go to bed. We eat white sugar, white flour, white vinegar, partially hydrogenated oils, artificial colors, artificial ingredients, lobster tails, 16 ounce prime rib, lots of ice cream and cake and you name it, if it tastes good, eat it. That was me for 44 years. My 3-year struggle with drugs in my twenties did not even compare to my terrible diet/lifestyle.
Well, today, I would like to talk about rebuilding our bodies and minds by going Green. I’m not talking about planting a tree or putting up a windmill. I’m talking about green foods and foods that act like green foods.
If you have been anything like me, your body is crying to be spared an early grave. Now cleansing is a biggy and step one. However, I have been talking about cleansing a lot. It is time to talk about the next step, rebuilding. Let’s make our tent homes (Bodies) disease and sickness proof.
Here are some steps we can all take for more and better energy, physical strength, weight loss, being more toned mentally and physically, longer life, clearer and more tranquil minds, and less or even no fear of the big three; Heart disease, Diabetes, and Cancer.
By the way, the big three way of dying is not natural. When folks come up to me at the market and say, “Why get healthy? You have to die of something anyway.” This makes me shutter and want to strangle these people so they might wake up. But, I was the exact same way.
There is a natural way of dying that many folks have done for 6000 years. You lay on your bed when you are ancient in age, bless your kids, grandkids, great grandkids, great great grandkids, and then go to sleep__________________________. Hi Jesus!!!
Step 1 – Pure Water—For starting the healing and rebuilding process we need to hydrate our body and mind. Our bodies are about 70% water and our brains are about 85% water. Our cells sit in a pool of seawater. Yes, we are more than just dust.
According to the “Water Cure”, we need to drink half our body weight in ounces of water a day. For me (I weigh about 135-140) it is about 65-70 ounces or 8 or 9 eight-ounce glasses a day. Green tea and raw carrot juice count as water.
I start everyday with a 12-16 ounce glass of distilled water, a large pinch of sea salt and a teaspoon of BarleyMax. 45 minutes later, I take my power drink, composed of Barley Max, BeetMax and CarrotMax in 8 ounces of distilled water and I’m on my way.
You will be amazed at how you begin to feel when you get hydrated in the morning. Water itself can heal headaches, and is good for the joints and mind.
A rule of thumb, which I never listened to, “about 65-70 ounces (H2O) of prevention is worth 130-180 lbs of cure.”
Step 2 – Greens—Broccoli, Romaine lettuce, Bok Choy, Barley Grass, Alfalfa Grass, Spinach. These are supreme body builders.
These greens will help normalize the blood by adding chlorophyll, which is really the foundation of the blood. The greens contain iron and calcium, among many other powerful nutrients. A cow gets his protein and calcium from the green grass he eats. WARNING! The cows you buy in pieces in the supermarket DO NOT, or should I say Are Not Allowed to eat grass. They are fed grains to fatten them up quickly for profit.
Greens are best eaten raw or uncooked. They are still great eaten steamed, baked, or stir-fried. I take Barley Max 5-6 times a day, as does George Malkmus, who had 6 months to live with colon cancer at age 42. He is now 75 and super healthy. I once saw a 19-year-old dog, very healthy, running around a big room that enjoyed being fed barley grass everyday for 19 years.
All greens are alkaline. Disease hates alkaline. Barley Max is one of the most alkaline foods in the world. If you have any acid problems, take Barley Max. My friend John at the Market sometimes has acid problems. When this occurs, he asks me for some of my Barley Max. Last time I counted the seconds until he began to feel it working. It was 20 seconds on my watch. WOW!
Step 3 – Honey Bee Creations!! Good Carbs, proteins etc.
Raw Honey- Raw Honey contains 165 nutrients. This golden nectar rebuilds bones. It contains two types of raw calcium for the bone knitting process. The Bible says honeycomb, health to the bones.
Raw honey will heal the digestion process, including ulcers.
All raw food including honey contains Oxygen. These foods help to oxygenate our bodies and minds. I have a customer who owns a horse farm. She recently told me that two years ago she had major allergies and asthma. That is when she started eating our honey. I remember that day two black Fridays ago. Today she is totally allergy and asthma free. My pollen allergies since childhood completely disappeared at 50 years old when I started eating Vermont Wildflower honey. Professional Athletes eat raw honey for the long energy (No sugar rush) it gives them.
There are many more beneifits to honey, but for the sake of “you don’t want this note 2 hours long”, I will cut it short.
Fresh Raw Bee Pollen—Some of the longest living people in the world eat pollen on a daily basis. Bee pollen is the ONLY perfect food in the world. It contains every nutrition the human body needs. Now that’s GREEN!
Some of the benefits are younger skin, more physical strength, energy, and healing support of disease including anemia.
Propolis—Poison Ivy (healing in 90 seconds). I am not exaderating. Acne disappears in a couple days. Cold sores heal quickly. Great for sore throats and what tumors might be growing inside.
All the bee creations are anti-oxidant, anti-cancer and it would seem like anti-everything bad.
Step 4 – Good Fats—I know fats can be a 4 letter word in this country, but we do need fats to live, and for a healthy looking body.
Some good fats are nuts (best raw),like almonds (Vitamin E), brazil nuts (selenium), walnuts (omega 3), and seeds, like pumpkin (great for prostate, loaded with zinc) and sunflower (night vision). Other good fats are avocado, flax oil, extra virgin olive oil (sparingly), organic raw dairy (eaten sparingly).
Step 5 – Generally Speaking, other good carbs are whole grains such as brown rice, millet, sweet potatoes and yams. Eat a lot of veggies (raw, steamed, baked, stir-fried), which are loaded with, as Doctor Joel Fuhrman would say, phyto-chemicals. Berries are also very high in anti-oxidants, such as blueberries and elderberries. I would say eat abundant raw fruit in season.
Step 6-7 & beyond—Don’t forget to pray to Christ, forgive, exercise, get some sunshine, breatheeeeeee, cut back on stressssssss.
Ladies and Gentlemen, contained on this page is only the tip of the healthy iceberg. However, there is enough info here to make a great start to a healthy, peaceful, energetic, disease-free, long, young life.
Seriously, an ounce of prevention is really worth a pound of cure.

Monthly Nutrition Classes
I am very excited about the up-coming covered dish/nutrition classes to be held the 3rd Saturday of every month.
At this point in the game, since we have folks spread out all over northern and southern Pennsylvania, we want to have the meetings at three different locations, one each month. I will keep you informed of the location of the month, the teaching topic, speakers, and the culinary theme through this newsletter, and signs at the markets. We wish to meet at the Blue House in Trucksville (Wilkes Barre area), our home in Dorrance (near Mountain Top), and soon to open “Be Nourished” Health food store/Luncheonette across from the Berkshire Mall in the Reading area.
These meetings will give folks who are interested in a healthy lifestyle a chance to stay connected and supported, learn recipes, and find a path to real health with all the extra benefits, including youthful energy, longevity, and no more fear of disease.
Starting in April, the meeting time will start at 4 pm. Each person brings an ingredient for the salad bar as well as a main or side dish or dessert. Everything must be vegan (nothing from an animal or made from animal ingredients; just follow the directions on the other side of this page on a healthy vegan diet). Out of respect to those who come to the meeting that don’t eat meat, we decided to exclude meat. A meat eater can eat vegan but a vegan can’t eat meat. We eat the salad and main course, and then have the teaching, DVD, or cooking demo, etc. After the teaching, we have dessert time and fellowship. The atmosphere should be a mix of party and family reunion. In other words, the monthly events should be a lot of fun.
What do Vegans Eat?
Vegetarians do not eat meat, fish, or poultry. Vegans, in addition to being vegetarian, do not eat other animal products and by-products such as eggs, dairy products, whey, and gelatin.
Foods to Avoid:
Beef, pork, fish, chicken, eggs, turkey, hamburgers, hot dogs, bacon, sausage, bologna, etc. Carbonated beverages and soft drinks, Alcohol, sport drinks, and all drinks and juices containing preservatives, refined salt, sugar, and artificial sweeteners, sulfured dried fruits, All milk, cheese, ice cream, whipped toppings, and non-dairy creamers Refined, bleached flour products, most cold breakfast cereals, and white rice, All lard, margarine, shortenings, and anything containing hydrogenated oils or trans fats, Candy, gum, cookies, donuts, cakes, pies, or other products containing refined sugars or artificial sweeteners, All refined white or brown sugar (brown sugar is simply refined white sugar with some molasses added for color),
Acceptable sweeteners include raw unfiltered honey, stevia, agave nectar, and pure maple syrup, evaporated cane juice sugar and raw sugar in moderation
Egg and Dairy Replacements (to convert a favorite recipe)
As a binder, substitute for each egg:
1/4 cup (2 ounces) soft tofu, or
1 small banana, mashed, or
1/4 cup applesauce, or
2 tablespoons cornstarch or arrowroot starch, or Ener-G Egg Replacer or another commercial mix found in health food stores.
1 Tbsp. ground flaxseed mixed into 2 Tbsp. any liquid
The following substitutions can be made for dairy products:
Soy milk, rice milk or nut milk may be used.
Buttermilk can be replaced with soured soy or rice milk. For each cup of buttermilk, use 1 cup soymilk plus 1 tablespoon of vinegar.
Soy cheese available in health food stores. (Be aware that many soy cheeses contain casein, which is a dairy product.)
Crumbled tofu can be substituted for cottage cheese or ricotta cheese in lasagna and similar dishes.
Several brands of nondairy cream cheese are available in some supermarkets and health food stores
